Mongra grade is the finest classification — only the dark red stigma portion is included, with no yellow style attached. This is the part of the saffron flower that contains the highest concentrations of crocin (colour), safranal (aroma), and picrocrocin (flavour). Four to six strands soaked in two tablespoons of warm water for fifteen minutes produce a deep golden liquid with a fragrance that genuinely fills a small room. This is what real saffron does.
